Sweet Potato Juice / No-Waste Patties

Sweet Potato-Carrot-Orange Juice and No-Waste veggie patties



Juice sometimes gets a bad wrap. It doesn’t contain the fiber that whole fruits and vegetables do, so getting your nutrients straight from the source is ideal, of course, but sometimes I don’t want to eat 5 cups of spinach or three carrots with my breakfast. So, drinking a juice is a nice way to get a boost of vitamins and minerals into your diet that you otherwise might not be able to get. 
I’ve been enjoying making different juice concoctions lately, and this one has definitely been a favorite of mine! I had no idea that I could juice sweet potato... and oh boy has it been a game changer! 

For the juice you will need a juicer. I use a Breville centrifugal juicer. 


  



Ingredients: 

1 medium/large sweet potato
3 carrots 
1 large orange 

Peel all of these ingredients.





Now, juicer pulp is just as fun to experiment with as juicing! Every time you make a juice, you’ll be left with dry pulp that contains all fiber and additional nutrients. 

I’ve used all of my juicer pulp so far, because I hate wasting food and throwing it away, but this recipe has me wanting to make another sweet potato juice just so I can use the pulp to make these patties! 

For this recipe you will need an oven, and a food processor/blender is optional. 






Ingredients:

Juicer pulp from 1 sweet potato and 3 carrots
1 can of chickpeas
1/2 of a red onion
One flax or chia egg 
(1 tbsp seeds 3 tbsp water, let sit for 10 minutes) 
Garlic powder 
Paprika 
Salt and pepper to taste 

Pop all ingredients into a blender or food processor, or, mash the chickpeas with a fork, and mix in the other ingredients. 

Shape into 4-6 patties and bake at 350 F for 25 minutes 

My favorite way to eat these was in a salad with lettuce, spinach, tomato, and Annie’s goddess dressing. 

Note: the juice recipe calls for an orange. If you plan on making the patties out of the pulp, juice the orange last and collect the pulp before putting it through the juicer. Not sure how these would taste with orange in there!!
