Brownie Recipe

     These brownies are as healthy as they can be while still tasting (and looking) like brownies. I've served these countless times, and on multiple occasions, and they're rarely met with opposition! In fact, it's a good thing that they're not too tough to make, because not a single crumb ever goes to waste with these. 

     I made this particular batch extra dark, because I'll be pairing them with banana ice cream, but that is completely up to personal preference. 



     I made these without any oil, so they're much better for your body that brownies that contain butter or oil. Also, because of this, they're lower in calories, so you can eat more of them than fat-filled brownies! Which also means more nutrients per calorie!

     The brownies (as you'll see) are sweetened with coconut sugar and maple syrup, which are two alternatives to cane sugar that are lower in fructose, and have a lower glycemic index. Basically, the sugar enters the blood stream more gradually over time, and won't spike blood sugar levels! This means sustained energy, no sugar crashes, and it's a good way to get in sweet treats even if you're trying to lose weight. I also like using these sweeteners because they have flavours and add another dimension to the brownies that you wouldn't get with bleached white sugar. 


Dry ingredients:

3/4 cup oat flour (blended oats)
1/2 cup cocoa powder 
1 tsp baking powder
A pinch of salt




Wet ingredients:

1 can no salt added black beans
1/2 cup maple syrup
1/2 cup coconut sugar
1/4 cup water 
(Add an extra 1/4 cup maple syrup or sugar if you want the brownies to be sweeter)




*Optional:

Dairy-free chocolate chips
I opted for 100% cacao to make this extra rich and dark, but that's completely preferential. You can always sub chocolate chip for walnuts if you prefer! I used 3 squares of the dark chocolate and chopped them up finely. 




Instructions:

1.) Blend oats to create flour and mix with other dry ingredients
2.) Blend all wet ingredients and then combine with dry ingredients 
3.) Place in a baking dish, approximately 9x9 or 8x10 
4.) Bake at 375 for 30 minutes. Test with a toothpick along the way, because every oven is different. 



When they're ready, they should have small cracks forming along the surface. 

You can use them so many different ways. Frost them with a store bought cake frosting (most of which are vegan, just check the ingredients) or chop them up and put them in a bowl of banana ice cream for breakfast. Or, of course, you could do both!
