Apple Pie Porridge

Apple Pie Porridge

     I opened my fridge to find about 20 apples in there the other day (thanks mom) so let the apple recipe collection commence! I can only eat so many apple slices with peanutbutter...
     This recipe is also packed with plant protein, and tons of deliciousness, because I'm back to lifting! Today was leg day if you were curious. :)


Ingredients:
1 cup water
1/4 cup almond milk
1/2 cup rolled oats
1/2 scoop vanilla protein powder
1 tsp vanilla extract
1 tsp cinnamon
Dash of nutmeg
1 apple
Handful of sliced almonds
2 tbsp plain almond milk yoghurt
1 tbsp almond butter
1 tsp coconut sugar

Instructions:

1. Slice the apple and place on a parchment paper lined baking sheet with the sliced almonds. Sprinkle some cinnamon over everything at bake at 350 for 10-15 minutes
2. Bring 1 cup of water to a boil and cook the oats until thick.
3. Add almond milk, almond butter, protein powder, and spices to the pot and stir to combine. Let simmer until the almond milk is absorbed.
4. Place half of the apple slices on the bottom of the bowl, then cover with the oatmeal. 
5. Top with the rest of the apples, sliced almonds, a sprinkle of coconut sugar and a dollop of vegan yoghurt.

Tip: Cook the oats while the apples are in the oven!
