Sausage, Tofu, and Cheese Breakfast Scramble

     Hey, lovers of scrambled eggs. Listen up. Eggs are one of the world most dense source of cholesterol. The FDA recommended LIMIT for daily cholesterol consumption is 300mg, and one egg alone contains 186mg of cholesterol. That means that if you eat a completely plant-based diet, but two eggs throughout the day, you STILL are putting yourself at risk for high cholesterol. Not so fun fact: only animal products contain cholesterol.
     A lot of people like eggs because they contain protein, but so does this delicious alternative! Made with the infamous tofu, this cholesterol free dish replaces all of the things that vegans avoid (meat, dairy, and eggs) with something even more fantastic. This dish also features some of my go to vegan brands including Daiya, and an old friend, Tofurky. 
     So yes, you can still have the things that are familiar to you in a vegan version. There may be a slight difference in taste, but I promise it's delicious. And the best part? It won't harm you, the animals, or the planet. 




Yield: 2 servings 

Ingredients:

1 brick of firm tofu
1 spinach and pesto Tofurky sausage
2 slices of Daiya provolone
2 cups of chopped mushrooms
1 cup of chopped cherry tomatoes
A large handful of greens
1/2 of a red onion
2 cloves of garlic 
1 tsp of turmeric
1/2 tsp of paprika 
Dash of cumin
3 tbsp of nutritional yeast 

Instructions:

1. place the onion and garlic in a pan with all of the spices. 
2. Add small amounts of water to form a paste.
3. Crumble the tofu into the pan (breaking off bite sized chunks)
4. Chop the sausage and add it to the pan with the mushrooms and tomatoes
5. Fry until the tofu is golden
6. Turn off the heat and mix in the greens and cheese
7. Top with some salt and pepper


I served mine with some roasted zucchini, but it also pairs very well with avocado toast!
