Stuffed Avocado (Vegan, Gluten-Free, Oil-free, Sugar-free)

Stuffed Avocado


     Who doesn't love avocados?? Well, some people, but most of us are obsessed! Avocados can be used a million different ways. There's guacamole, avocado toast, avocado mousse, just plain and sliced up in almost any dish. Avocado is a game changer! 
     This, however, is not your normal avocado recipe. This, my friends, is a whole new level of amazing... Stuffed avocado. And? It's made with 100% whole plant food ingredients! That's right, no oil, sugar, cholesterol, or anything else that's not so good for you. 
     I don't promote low carb diets personally, but this is a low carbohydrate dish, but it's still nutrient dense and health promoting. I have yet to get a bad review on this one! So, go avocrazy and enjoy. :)


Yield: 1 meal // or // 2 sides

Ingredients:

1 avocado
1/2 can of rinsed chickpeas
1/2 of a ripe tomato (diced)
1/8 cup of corn
2 tbsp nutritional yeast
1 tsp of turmeric
Dash of paprika
Dash of pepper
Fresh or dried parsley or cilantro
Juice of 1/2 of a lemon
Salt to taste if desired

Instructions:

1. Slice the avocado in half and remove the flesh with a spoon, leaving a small amount around the peel.
2. Mash the chickpeas and scooped avocado and combine with the spices, and lemon juice
3. Mix in the herbs, corn, and tomato
4. Scoop the mixture into the avocado halves as pictured above


Each half has over 10g of whole food, plant based protein, and it can easily be increased by adding more chickpeas to the mixture. If eaten as a meal, you'd consume over 20g of plant based protein, healthy omega-3 fatty acids, nutrients from the herbs and vegetables, and the juice from the lemon helps to make the nutrients more bio-available and easily absorbed by the body. Plus, turmeric is an amazing little spice with tons of health benefits, and this dish is a good way to incorporate it into your diet!
